We visited Nagai City, Yamagata Prefecture, and had tempura soba for lunch! All three of us are international chefs, and we learned a lot from our interactions with soba, talking about its background, and eating it. Among the world’s noodles, soba is a wonderful ingredient that plays a major role in Japanese food culture. A traditional soba dish, incorporating many techniques, shows off the charm of the ingredients, and I believe that the aroma, texture, and flavor are a vanishing work of art. Once you eat it, it’s gone, right? LOL
