business at this HOMIES KITCHEN ? I had no savings back then . 10 million… It would cost 5 to 6
million yen. If I thought about fancy interior design
and all that, it would eat into my
savings. So I decided to start small and grow big.
That’s why I chose HOMIES KITCHEN because it felt
like the best fit for me . So I decided to

you know. Everyone , the seaweed isn’t wrapped around it . If you like seaweed, you can have it with plain white rice .
Once you try the mixed grain rice, a lot
of people get hooked. Making plum, dashimaki, and mentaiko . Sorry, everyone. I ‘m told I sound low- energy and my voice
is low in the morning . How many hours do
you work in a day , Mr. Higashi ? On
business days , about 10 hours, I guess. So it’s way easier than in winter. Prep work has sped up the most, so this is actually shorter. So it’s totally fine . Talking with customers makes time fly. Dried sardine and green onion mixed grain rice balls done. 6:20 . Hiroshima City’s temperature is

judge the cooking? I can tell just by looking, really . The softness, whether it’s too hard or too soft. I always make sure to taste it. Shrimp tempura done . Super fast. We really won’t make it otherwise . We have to

kilograms . S) How much does that cart weigh itself? That’s about 110 to 120, so all together it’ll be around 150 kilos,
right? When you lift it up (to carry it), the slope is brutal . The weight of the rice balls makes a
huge difference. Yesterday… yesterday and the day before were brutal. Making spicy fried chicken . Spicy fried chicken done! Spicy fried chicken done. Flake the grilled salmon. Add it with the skin on . Pack it in tight . Staff) Mr. Higashi, you put the skin in
the salmon? S) Do customers react to this? I’ve been eating it like this for ages,
but customers say, “The skin’s crispy and
delicious!” so I decided to keep doing it . But if you don’t cook the skin well , it gets slimy and doesn’t taste good. This much is fine, but if it’s like this much, or this much… the ones that are a bit slimy , I cook
just the skin again here . If the skin isn’t crispy , it just
doesn’t taste good. It feels a bit gross . If it gets squishy, I think it probably messes up the mixed
grain rice over there. I think it’s probably done over there . Once I go over there , I’ll probably do some fan service .
