And wasabi, I think. Wasabi. and the ginger. Yeah. And shredded daon radish and ginger on top. This is a daon. It’s we call takuan. Tuan. Takuan. It’s that one. Yeah. So exciting. This one is like seven different like a spicy seasoning. We call yours is coming. Yeah. Yeah. Hi. It’s very beautiful. Yeah. Thank you. Thank you. No, I want move more to the window side. So, I want this hand to be in this hand to be in. That’s it. That’s it. Otherwise, it looks odd if you’ve just got a shoulder of somebody, but no. No. Uh, yeah, I know. Don’t zoom. Yes. Nice. Nice. Nice. Nice. Okay. One more. One more. Okay. Nice. Just clean all this away. Okay. This is a dipping sauce. You just Yeah. Like Yeah. And green onion and white wine like shredded daon. And on top is a shredded ginger. Okay. So you just uh you know taste the first time is not including in the topping just a simple one then after change you know uh flavor they mixed up. So and this is this is seven different hot pepper we call steamy steamy steamy steamy steamy and this one is like a pickled yes I like this one. Yeah. Okay. Yes. Okay. So the soba is cold or or hot? Um I recommend cold one. Okay. Yeah, because uh uh uh so I love hot one in the winter time. Let me try this so good because I want to um So usually uh Japanese people make noise. Yeah, it’s it is a not bad manner in Japanese culture. No, in our culture it is bad manner. So, it’s very hard for people to, you know, in It’s funny, isn’t it? Because But it’s good. So, you dip the soba in the sauce. Yeah, just just plain also. and tempura. We had a shiake and um shrimp. And this one is a like a wild mountain leaf. Yeah. And pumpkin. And this one is mushroom. That’s delicious. Yeah. It’s a I I I don’t know what one kind of like asparagus or something. Yeah. Even just this soba is so delicious and nice and Yeah. Good matching of the summer time. Yeah. Yeah. Your style is nice. Nice. Very good. Also, you can dip in the tempura. So this is a temporary soup shrimp here. How beautiful is that batter? Look at the mushrooms. We call she black [Music] in as well. Max, do you eat the tail? up to you. I don’t tend to so uh tempura has a like my technique. Uh this one is like crunchy outside skin, but I’m just making more soft one. Okay. Yeah. It’s a mushroom. Mushroom. Black mushroom. We we call mushroom. Yeah. Black mushroom. Black mushroom. Black mushroom. So this making like a crunchy texture out of a template. Is your friend’s place better or this one? What do you think? Not fair. Not fair with noodle. It’s little bit. So my friend place is a h cutting and more more buckweed flavor and the dipping sauce is a little bit different. Each soap has a character. Good. Yeah, I love this character also. No problem because my first time visit here. I think this shop has a little bit long history and doing business because always I’m go through in the main street. This shop it’s very famous. Very good. So, what do you do with the spices? Does it go on the on tempor on the noodles? You should try them. Yeah. Oh, I like it. Yeah. Try it. Yeah. Seven. Seven different like seasoning include everything. So where would you put that? See sesame, black sesame and chili and some I’ll put it on the on the noodles. Uh not too much. Not too much. Why? Yeah. Depends on situation. If you like spicy one, go ahead. Go ahead. Go ahead. It’s going to be gone in a minute because it will go in the a lot will go inside the sauce. So, so with spice, seven spices. Yeah. [Music] I’m in heaven. Right. So, this line we called soba. Do I like ramen or or soba? Both. I like Yeah, I think this shop had a high quality soba to traditional one and good combination with Yeah, it’s a it’s a pumpkin. Pumpkin, you know. So, this video episode is a a day trip with Max. Thank you. Thank you. And we find a place, you know. So you find a good place. We are lucky. We So after I go home, I’m just uh get contact to my uh friend of sober shop over there. We cannot enter. So I guess he’s miss to us. He said I’m so sorry that time is you know not matching the timing usually that place is another you know type of a soba serving never mind maybe he will um he’ll say oh no my arched rival yeah u because u he used uh doing uh sober shop up close over there it’s just a moving I think that place is a his like a main home. Okay. Yeah. Home and shop in the together like me. Yeah. Yeah. Yeah. But he must be uh must be very good to be so good. Maybe there was an event on a Monday. But maybe some some group party. Yeah, I think so. No, but that time is at 12:30. Real early to close. Yeah, I’m I was think about why. So, I’m just checking inside. Many people sitting there and u my uh friend shop. So, uh they just doing a couple uh my friend and his wife. Yeah. Yeah. Just a two people walking busy restaurant. Yeah. Yeah. You better drink like a simple one. Yeah. Empty, right? Oh, okay. And try to mix. Okay. Like this. So, this is just Yeah. Because you are a chef. You have to run. Yeah, it’s almost coa. Yeah, cornote. So that’s a buckwheat. M. So each soa shop had a like a different color. So one of this one is a kind of like a white side but using like a kind of like a shell of a uh bucket uh seed. Mhm. Yeah. Including you know making flour and then making soba getting black one. Yeah. This one is a white one like kind like using ka of like a buckwheat seed. It reminds me a little. No, at that moment have my shrimp. Yeah. Yeah. I love it. Love it. Love it. Love it. So after drink so you you mix up and you know adjust and type to make a kind like soup after soup. Steve, Michelle, and I—three chefs—drived 105km (approximately 2HR) from Niigata Prefecture to Yamagata Prefecture to visit Somiya Shrine, a famous shrine with a 1,300-year history. The chief priest of Sogu Shrine is a close friend of mine, and he’s a well-known biker in Japan. Sogu Shrine is also known as the Motorcycle Shrine. On weekends, as many as 250 bikers from all over Japan visit the shrine, and it’s a beloved shrine with many ordinary worshippers as well.

After the visit, we had lunch at a soba restaurant.
Tasting soba with fellow world-class chefs while I explained about soba was exceptional!

At Betsubara, we went to a friend’s pastry shop.
