Oh man, Birds Nest drink was the bane of my life when had it 30 years ago. I'm part Cambodian and my mom was laughing when she had me tried it. Haven't had it since but the taste and experience was so pervasive that it stands as a big pillar of Nope that a whole chapter of the book that is my memories could be written on it.
The ginger chicken dish is wonderful. When the render chicken schmaltz mixes with the seasoning and msg and starts coating the rice along with the slightly spiciness of the ginger. Man, it brings back memories.

O kun is an awesome place and person! I still remember when he had his shop at the michi no eki. I'm happy you could introduce him!
